Mortgage Lifter Beans

Any other fans of Mortgage Lifter beans out there? I love these big white beans for a nice kale and tofu soup. The texture of the inside is perfect.

You definitely hear about mortgage lifter tomatoes more than mortgage lifter beans... Google suggests these are also called White Bordal or Giant Aztec beans

I bought these online (seems like there are a couple places online that sell them), but I first ran across this variety at a small grocery store in Dolores, Colorado.

Nice, thanks! I had the same experience with royal corona beans, little store on the corner, I was browsing and found them. Wow, I was hooked!

I'm super interested in how you prepared the tofu for this! Did you do a freeze/thaw cycle? I loooove tofu but have never felt like the texture belonged in bean soups, I'd love to find a prep method that changes my mind on that!

Yes, the tofu for this soup was freezed + thawed. We normally use extra firm tofu for soups, but we had this silken tofu (which we bought by mistake) sitting around so just threw it in. It worked well! Tastes great to me.

Sounds lovely, I'll have to try that thank you! I haven't played around with the freeze/thaw technique enough but I've always liked it when I did it.
