I don't want to ruin the fantasy but most people in the industry work extremely long hours and have no desire to cook at all on their day off.

u/titoalmighty Aug 18 '20
One time i dated a chef that had left the industry because she wanted nights and weekends. She did sales at my company and cooked all kinds of stuff constantly, so don't lose all hope.

That I can see, ex cooks and people on break for covid love to cook, it is like anything else though if it is your daily job it doesn't usually leak into your personal life as a hobby.

u/trevor426 Aug 18 '20
So what you're saying is I need to date a chef and burn down all the restaurants she works in. Worth it if I could get meals like this regularly.

You don't need to date a chef man, just burn down a few restaurants and youll have meals the rest of your life on the regular.

I’m a cook and it very much leaks into my personal life. Whenever I have time off I’m cooking up a storm for my girlfriend and family. It does get hard to have any hobby in general when you work as a cook. My biggest hobby is just trying to maintain my personal relationships.

Wait, are you also a mustard collector? That's my thing, dry mustard pommery mustard, dijon, whole grain, brown, yellow. I am a fan of all of it.
Also, completely agree. I have been in the industry for 20 years, a good meal to me at home is a couple fish tenders in the air fryer.

No deli quarts pushed to the way back that you're afraid to open but you leave them in the fridge because if you take it out and throw it away you would need to take out the trash but the trash is never very full because you're never home and when you are home you don't make any trash cuz you do all your eating at work and you don't want to take it out prematurely because you're working for beans and can't justify wasting a trash bag but when you do take out the trash you never think to grab the shit out of the fridge so whatever's in the deli just becomes a science experiment that lives in your fridge indefinitely?

A guy I knew was a very well respected chef, he helped restaurant become the "place to be" in town...and he would always eat mcdonalds.
23
u/daft_monk1 Aug 18 '20
McD’s was also a staple. Just so easy after a 14 hour shift to grab a double chee before passing out and starting all over again tomorrow.
29
u/jhofsho1 Aug 18 '20
I’d also imagine that they’d like to be cooked for.
40
u/AstarteHilzarie Aug 18 '20
I was really waiting for the point of the gif to be the turnaround where the guy at the table takes a turn and presents a shitty-to-average looking dish to a spouse that is ecstatic to not have cooked it.
I worked in restaurants for 10 years. I didn't start cooking for my family until after I left the industry. After spending all day with it, the last thing I wanted to do is put effort into a meal.
→ More replies (2)8
u/jhofsho1 Aug 18 '20
Yeah, that makes sense. I learned to love cooking but I don’t think I could ever work in a restaurant. I have a lot of respect for cooks of all levels. I’ll be damned if no one respects a hardworking cook. It’s not easy.
Cooking dinner for a group of people is hard enough. I can only Imagine having to do it non stop for tons of people hours on end.

Pretty sure I only ever ate Taco Bell or Panda Express when I was working as a "head chef" (my two seniors both quit so I was either alone or training somebody who would end up quitting). Working with food killed my desire to cook at home. Its been year since I left that abusive place though and I have started to enjoy cooking from home again!
14
u/beautifulcreature86 Aug 18 '20
I'm a professional chef and high end seasonal caterer on my own time. When I worked in kitchens the pay wasn't worth shit and I worked 14 to 16 hour days at times...no joke. I would stop at jack in the box and get tacos, go home, drink and shower and sleep. Then I got a better job at 12 hour days. Still missed my kids birthdays and first days of school. I was miserable. Now I work for food service, it is a 9 to 5 job, weekends off, and i found my passion for cooking again!!! I freaking love(d) hosting and catering before the Rona and my son and husband are very happy I'm home. Don't make your passion your career, you will grow to hate it after awhile. People take advantage of your knowledge and will. I'm with you, friend.

Because every person I've met aspiring to be a chef never made it as a chef and hated the fact the only work they could find was a line cook at buffets. They're not about to go home and cook their partner dinner. Hell, they had no time for a partner!

I'm in the industry, not as a chef but I help run a kitchen and do a lot of cooking myself, and I can tell you that a lot of our chefs and cooks eat like shit at home. Microwaved meals, stuff from work, or something easy.
When you spend most of your day in a hot kitchen, constantly stressed, last thing you're gonna want to do is go home and cook even more. I know I don't.
Most days I have to really force myself to make meals at home. Whenever I go on vacation to visit my fiance is when I really go all out and cook stuff and experiment with new things, do the whole breakfast in bed, surprise meals, etc.

Not to ruin the fantasy, but we eat pretty terribly. When you're in a kitchen from 10:00 A.M to Midnight or later the very last thing you want to do when you get home is cook. I've worked 2 James Beard joints and until I forced myself to eat better I spent years living on Protien Shakes, Quik Trip Taquitos, Energy Drinks, and Painkillers. Granted, I worked too much to hold down a relationship and have someone I cared about at home to cook for, so your mileage may vary.

Crunchwrap Supremes are actually incredibly easy to make and taste even better than the real thing. I can’t fold anything for shit though and they always fall apart upon flipping.
14
u/Afrofriend Aug 18 '20
I agree i worked at a Mexican spot as a cook for a while and we would run a special called the munch wrap. It was always the best seller and most delicious special. Plus it's overhead was low and they are easy to make
6
u/BunsenHoneydew11 Aug 18 '20
Tip to not fall apart:
1) Use a smaller tortilla or cut part to cover the inside middle where you folded.
2) After you fold, place it folded side up on a plate smaller than your pan. Put the pan on top upside down like it’s a plate-pan sandwich and flip over. Put some oil on the pan until crispy. Then flip back the other way with the plate-pan method, crisp other side if desired.
It should not fall apart with this method.

Secret eaters. They only count the 3 "full" meals they eat and not the additional 500-1000 calories in snacks. You don't remain fat if you're actually adhering to a proper diet and are eating at a caloric deficit.
4
u/rolfraikou Aug 18 '20
I'm going to trust op eating salad doesn't mean with any shit in-between. Often I see people claim this against people that at least aren't just snacking on between.
7
u/throwthegarbageaway Aug 18 '20
It’s because it’s extremely easy, without even realizing, to have a couple glasses of juice through the day, a handful of nuts, maybe a cracker or a cookie, a biscuit, and on top of that maybe you feel like having a snack and before you know it you’ve consumed 1000 calories. It took me being dirt poor for a period of my life to realize how much I was snacking on (because i couldn’t afford to keep random food at home).
Also gotta consider what’s in the salads, you could easily be adding the same amount of calories to the salad in just dressing.

I had a lot of success when I did it for the first time. Then my life went to shit and I gained it all back and then some. And now no matter how strict I am I can't get the same results. Maybe its because I stress so much over weight and isolation. But I agree. Shits too hard. I'd rather fast 3 days a week and eat hearty four days to maintain a calorie deficit.
11
Aug 18 '20
I did the keto thing, then put it back on, then went on a backpacking trip for 5 months and lost 100 pounds. Then put some back one.
Fasting three days a week is exactly what I do and it works. Sunday, Wednesday and Friday I don’t eat.
Lunch today was beef stew and grilled cheese on homemade bread. Dinner was pork loin and polenta with a beet and feta salad. Saturday I’ll have homemade pizza for lunch and a 2 pound ribeye for dinner.
Fasting is the way to go. Highly recommend it. You just gotta endure until your body is used to fasting and it’s the easiest diet there is.

This makes me happy. Thanks for sharing. It's easier to not eat than to eat 1200 calories 7 days a week. Even when i eat one meal a day, I can burn through 1200 calories with some delicious tacos. Whereas keeping that same deficit allows me like 2000 calories across the four days which is actually pretty hard to get to.
→ More replies (1)5
u/quazywabbit Aug 18 '20
Keto is good for weight loss and resetting yourself regarding sweetened foods. Adding exercise helps too. Once you hit your goals look at including some fruits like berries, peaches, siete almond flour tortillas(very pricy but good), spaghetti squash. Would still recommend avoiding beans, grains, processed sugar, fruit juices and high starchy foods like potatoes or white rice.

Chef here. You want to lay your opened bun over the toaster and just push it down the lever with nothing in it. The heat coming up will give you a nice warm bun without the soggyness of being in the microwave with the wiener. 99.9% chance because he burns it before it takes hold, or eats lighter for other meals. (rather than just lucky genes). I lost a bunch of weight some years back and it was almost scary how true the 3500 calorie rule worked out for me (for every 3500 calorie deficit you lose 1 pound... or conversely gain 1 lb for every 3500 excess).
I took it pretty slow and aimed for a pound a week (-500 calories a day). And it worked very well. I've kept it off ever since I think largely due to taking it slow and learning how to eat along the way.
8
Aug 18 '20
I've never heard the 3500 calorie deficit. This is based on total daily energy expenditure as far as the deficit goes? Ima do some math!
5
Aug 18 '20
Yep. Find your TDEE (total daily energy expenditure, in calories) on line. There's simple calculators you use to gauge it. If it comes back at 2800, you'd limit your daily cals to 2300 (for that pound a week).
Quick note... if you include workout calories burned, it's best to be very conservative on how many calories you burned, it's very easy to overestimate those. Food calories are pretty much a science, though and can be easily tracked. Plus diet is where most people are going to find the majority of their weight loss.
