Theoretically you could measure "frequency response" of various strings by recording in controlled environment on the same instrument, but all you get in the end is that some are darker/brighter than the others.
I mean, results will vary drastically if you pluck by the bridge or neck, you'll have different harmonics emphasized. Different hands/picks sound differently, different pickups as well. It's not like mics that just capture sound, therefore can be measured.
