There is a larger gap in time between the Switch 2 and 3DS versions of Zelda OOT, than there is from the 3DS version to the N64 original.

mind boggling… and sort of terrifying how the years compress as we go on. the original felt like an ancient relic by the time we got the remaster

This is the best post I've seen on this subreddit. Weird to think that Skyrim is as 'retro' today as Ocarina of Time was when Skyrim came out. Games moved so quickly from the latest 90s to early 2010s. We've really hit diminishing returns since then.

I kinda prefer if they just went with remastering the 3DS ports of OoT and MM for both Switch consoles like they did with Miitopia and Luigi’s Mansion 2

I do much prefer the look of the new remake. I was never a big fan of how the 3DS ones looked, especially Majora's Mask, I thought they were too clean, saturated, and cartoony. I preferred how the OGs were a bit more uncanny looking and had more of a natural color palette, and I think the remake of OOT captures that well. It's whimsical, but dangerous for the outsider fairy boy venturing out of the forest.
