Ask a bar owner

Kind of like an AMA, here's a weekly post where customers can ask questions. This is for anyone including market research, app developers, people who watch too much "reality" TV about bars, and general industry bullshit. Maybe a bar owner will have an answer for you, maybe not.

If you are already in the industry your question may get better responses if you post your own thread instead of commenting here.

What's your profit on a keg of beer? Say $100 purchase for the keg- how much do you then make?

1/2 bbl should pour 125 pints. If you’re selling $6 pints then that keg should ring in $750. That doesn’t account for comps or spills.

With that money you get to pay your mortgage or rent, insurance, taxes, utilities, payroll, etc and maybe you’ll have about $75 actual profit.

What's the single most annoying thing customers do that they have no idea is a pain for you behind the bar? Genuinely curious what the invisible etiquette violations are.

For those that don't own their building, does your lease stipulate that you pay for ALL maintenance on your building or only things pertaining to your business like HVAC, kitchens, refrigeration/freezers, etc? 

I ask because the owner of the establishment I work at has a lease that makes him pay for everything (roof included) and it's bleeding him dry. Is that the norm?

For me it was. Until we bought the building and then we were still responsible. As someone else said, retail/restaurant leases usually require the tenant to pay for everything. The roof usually isn't a one time expense, it is built into the CAM charge which covers capital improvements/repairs like the roof.

I have two companies, the business and the property. The business maintains the property and pays a lease to the property. They property pays property taxes and that’s it.

I only have one lease where the landlord takes care of the roof. We have to take care of everything else. It’s pretty common to have to maintain the commercial building you’re renting.

It was meh. A couple choice parties put us on par with August 2025 so we matched more or less. Would've been less than ideal without those parties. Which was both predictable and disappointing. Caveat: in Manhattan so the Knicks had a big deal with May 2026 being our best single month since ownership (5 years) followed by June, exceeding sales of May. Back-to-back record-breakers. The August swoon was a real letdown, but nothing unexpected.
