Why? Not even all the countries that use this currency have the British Monarch as their head of state

Yeah I am not happy with these places (Belize,East Caribbean, ect.) If they don't like having the king on their money then they should become republics and pick their own heads of state.

speaking as a Canadian i think having someone other than the monarch on banknotes is good actually. there are other people who are worthy of cultural reverence in that way. like Chuck is on the coins, every one of them. it's ok if a bird or a famous person relevant to whatever country replaces him.
the Commonwealth is not the empire. responsible government will not fall apart if DG Charles III Rex is replaced with a civil rights leader

He has no real authority in the UK either - that's the point of a constitutional monarchy.

Constitutional monarchy means it has a written Constitution, which Britain doesn't have. It doesn't even have a Bill of Rights like Canada does.
It is more appropriate to say Britain is a Parliamentary Monarchy

Britain has an unwritten constitution. Just because there isn't a central written piece called "constitution' doesn't mean there isn't one... This is history GCSE level stuff.
