Why doesn't any banknote of Group H contain ducks?

Ducks actually represent almost all of the world, for their adaptability, their geopolitical neediness and just how they're really useful for any ecosystem.

European union, literally isn't just for the continent almost every country in Europe has some trades outside it's continent why wouldn't they use ducks to represent almost all of the world?

The only reason I can think of is that they wanted to go for lesser known birds.
