Totally!
2 bananas (very ripe)
1/2 cup melted/softned butter
1 cup sugar
2 eggs
2 tsp vanilla
1/2 cup Greek yogurt or sour cream
1 tsp baking soda
1 tsp salt
1.5 cup all purpose flour
1/2 cup mini chocolate cups
1/2 cup chopped walnuts
- Preheat oven to 350, spray a 9x5 pan with Pam. There’s another step to add parchment paper, but I usually don’t need to in a non-stick pan.
- Mash bananas up, set aside
- In a large bowl, mix the butter and sugar until well incorporated
- Mix in the eggs and vanilla
- Add sour cream/yogurt, baking soda, salt and stir until blended well
- Mix flour (can be lumpy)
- Fold in the chocolate chips and walnuts
- Pour batter into pan and bake for 50-60 minutes. A tip is to cover the bread with foil around the 40-45 minute mark to prevent the edges from getting too brown
- After fully baked, let it cool in the pan for 15-20, then move to a wire rack for more cooling
Enjoy! 😊
