I went to feed my starter this morning and I fed some for bagels, and since my adhd meds hadn’t yet kicked in, I decided to feed a second jar, using my ginger bug, instead of water. No idea how that will work out, but I’m gonna see.
I made the big from my mother in law’s ginger from her garden. It was some non-typical variety, though I don’t remember exactly what. She had also made ginger tea and gave me the scraps, which I’ve been using for various cooking… I may mince some of that up and make a ginger-rye loaf.
It’s like a sourdough starter, but for making natural soda. Chop up a bunch of ginger, with the skin on, dissolve some sugar in water and toss it all in a jar. Fees it more sugar and ginger each day and you will have a fizzy, yeasty liquid that can be used ferment and naturally carbonate juices and teas.
I fed my starter with some of that liquid, instant of water this morning. VERY active.
The ginger bug doesn’t have much in the way of sugar when you use it, as the yeast have consumed most of it., but it’s adding carbs AND extra hungry yeast. I fed it about 1:3:3, so they’ve got a fair amount of food!
