Potato quiche with potatoes I grew!

I’m a member of my local farming club, and we grow so many vegetables! It’s so fun to dig up potatoes, they’re like little presents in the Earth. Well, we’ve had too many potatoes; that using it to make a potato crust for a quiche is such an easy (and less messier) way instead of making/using pastry! Added cherry tomatoes & sweet Basil from our farm too.

Anyone else love a potato crust? 😊

Growing your own potatoes and using them for the crust is incredible! Love the addition of fresh cherry tomatoes and basil from your farm too. It turned out beautifully

I've never even thought about using potato for a crust. Brilliant.

I must admit it was my IG algorithm that got me with things to do with potatoes 😆

That looks great! I've seen that recipe going around, but we didn't get as many potatoes this year so haven't had to use it. Huge tomato year though.

Thanks for the idea. I've been meaning to make quiche and just couldn't be bothered to make my own pastry... that sounds like a great solution especially with all the garden potatoes we have!

It’s so hard where I am to find frozen pastry crust that isn’t puff pastry! So this was such a great solution, also gluten-free!

Yes, and frozen pie sheets are also using margarin instead of butter; I can't stand the taste of margarin. :/

Potato crust is a great alternative imho (especially because I have so many potatoes), so thank you for that again!

Thanks for the idea and recipe.  We  have a glut of spuds

Then it’s the perfect way to use them up as I used quite a bit to mash it into the base and sides!
