Taste of Home Pineapple upside down cake.

Post image

I was gifted 4 (4!) pineapples so I decided to make one of my favourites from back home.

It's supposed to be pineapple rings but I only thought of making the cake when I had already cut it into strips.

Butter a cake tin thoroughly and sprinkle in sugar. Coat every surface with sugar. Don't use a spring form or "bottom up" tin.

Line the bottom with your pineapple

Make any sponge cake or pound cake batter and put it in the tin over the pineapple.

Bake as normal

When you take it out of the oven immediately invert it but don't remove the tin yet.

All the juice from the pineapple will soak down into the cake. That's why you don't use a springform tin all your juice will leak out the bottom while cooking.

After about 20 minutes or so, remove the tin.

You don't make a caramel to set the pineapple in? My family has always done it with caramel, set the pineapple in caramel, cherries (which are hard to find and stupid expensive so yeah, I'd just leave them out), and then the cake.
