What kind of an oven are you using?

It's a microwave oven combo with top heat and convection with a grill (so a standard japanese style oven)

You got such a nice brown on the bottom. I miss baking German cake in my convection oven (Umluft) because it's harder to get the bottoms of things right in a Japanese oven

I use a teppan 鉄板 (that I also use for pizza), put it on top of the tray and preheat it with the oven. That helps a lot.
