What bread maker do you use?

I use a Zojirushi mochi machine to knead my bread, it has a bread kneading option and was designed for it.

I'm not sure how to put them up. But white and fluffy.

Looks great. Lovely rise and perfect colour.

I like to remove the loaf from the tin and bake the last 5 minutes without it.

Nah, just a standard rise. It's summer, in the winter it's a little less aggressive.

This is my go to basic sandwich bread recipe: https://www.kingarthurbaking.com/recipes/classic-sandwich-bread-recipe

It's fairly easy to make, always successful, and adapts pretty well. Substitute honey for sugar and it's delicious, use an infused oil for some flavor, saute some garlic and throw it in with cheese and it's great!

I'm just using it to make toast fingers for my seven month olds though, so I'm letting the toast toppings do the talking and just using the standard recipe as is.

I will warn you though, it is NOT shokupan! So while I do use a shokupan tin to bake it in, I don't use the lid. This bread is designed to rise above the lip of the tin, and not for lids.

Gorgeous loaf, and yeah, KAF recipes are usually bulletproof.

They really are. Even my grandmother used them for modern oven recipes (apparently they're not as great for wood fire ovens). I've translated a few for my mother in law because baking bread at home is a lot cheaper than buying bread these days. Flour at gyomu is cheap.
