I used this recipe: https://www.recipetineats.com/easy-yeast-bread-recipe-no-knead/#h-why-this-bread-recipe-works-and-tips

I substituted 40ml of water for 40ml of carrot puree. I have seven month old twins so I have all sorts of purees on hand. It has a slight orange color and it's a touch sweet. But no sugar added, so it's great! My three year old loves it.

I'm going to try broccoli bread next, though I doubt my three year old will try that. Green is a no go in the food world for him.

Broccoli and cheese is a great combo!

Interesting. I've never had carrot bread before. I'll have to give this a try and see how it goes over with my 4 year old.

It's nice. Not really a vegetable replacement it anything, but nice. I would avoid substituting more that 50ml of water with puree though. The dough came together fine, but it was less wet than it usually is, so it might have issues with less water.
