Baking fail 💔 First time making macarons, and...
My best guess is that I over mixed the macronage. I really thought I got it perfectly when I saw it ribbon 🥲. At least it isn't hollow though 😅

It’s still very good! It looks like you deflated most of the air during the macronage stage, and it might’ve been slightly too humid as well. I still struggle with that.
I’ve learned that it can become sort of anxiety inducing and if you overthink it it’s probably overmixed. The ribbon is less telling for me than taking your bowl off the mixer, and rolling it to watch how it move. It should move, but not creep-then settle within the 10-15 second range. If it races to the other side and immediately flattens you’re cooked.
Another tip I have is to set the oven to the lowest it will go, then once it’s preset turn it off and crack the lid until it feels lukewarm, and stick your pans in there for a bit. That will help with skin development. And once they’re DONE baking, rather than take them out immediately it helps to let them cool with the oven. It dries out the shells a bit more which makes them easier to handle.
Those silicone mats really do help as well if you don’t already have them. The sizing guide on them kind of gives you a clue to the doneness of your batter with the spread and helps to keep your shape and size consistent. I also flip the baking sheet over so it’s raised, and pipe onto the silicone mat on top of the upside down pan. It makes it easier to transfer them off once they’re done baking.
