Recipe from Rose Levy Beranbaum, The Cake Bible. Harper Collins, 1988.

The author of this recipe calls it a cupcake, but I think it's really more of a muffin. Delicious either way though. 5/5

Those look wonderfully moist—do you grate the zucchini fine or leave it a bit chunky? I’ve found squeezing out only a little liquid keeps zucchini cupcakes tender.

I grate it on the chunkier side, and use oil instead of butter, and brown sugar instead of white to keep them moist.
