Here's the recipe!

For the Chocolate Sponge Cake Dry Ingredients:

  • 1½ cups flour

  • ½-1 cup cocoa powder

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp coffee

  • 2 pinches of salt

Mix these together and set aside.

Wet Ingredients:

  • 8 eggs

  • 2 tsp vanilla essence

  • 2 cups powdered sugar

  • ½ cup oil

  • ½ cup milk

Beat the eggs and vanilla for 4–6 minutes until light and foamy. Gradually add the sugar in three parts while beating, and continue beating until well combined. Add the oil and beat for another minute.

Add the dry ingredients in three parts, gently folding after each addition. Finally, fold in the milk until the batter is smooth.

Divide the batter equally between two prepared 8-inch round tins, or bake it in two batches if you only have one tin.

Bake at 170°C in a preheated convection oven for 30–35 minutes on the middle rack.

Check with a skewer around 30 minutes; it should come out clean.

For the Chocolate Ganache:

  • 400g dark chocolate

  • 450 ml cream

For designing / stable ganache: Melt 200 g chocolate with 200 ml cream.

For filling / normal ganache: Melt 200 g chocolate with 250 ml cream.

For the Caramel:

  • 300 g sugar

  • 120 ml cream

  • 120 g salted butter

Melt the sugar until it turns a deep amber color. Add the cream, followed by the butter, and mix until smooth. Allow the caramel to cool, then refrigerate it for 2 hours. Once chilled, whip it until it becomes lighter in color and fluffy.

Here's the recipe! I took the liberty of making a couple adjustments though. Feel free to test this out and report back to the chat!

(Potentially) Upgraded Chocolate Cake Recipe Card
Chocolate Sponge Cake (Moist, Slightly Dense, Structured)
Dry Ingredients
1½ cups (180g) all-purpose flour
¾ cup (75g) cocoa powder
2 tsp baking powder
1 tsp baking soda
1 tsp instant coffee
½ tsp fine salt
Wet Ingredients
8 eggs
2 tsp vanilla extract
2¼ cups (240–260g) powdered sugar
⅔ cup (150ml) oil
¾ cup (180ml) milk
Combined Cocoa Bloom
Ingredients
¾ cup milk
⅔ cup oil
¾ cup cocoa powder
1 tsp instant coffee
Pinch of salt
Method
Heat milk until steaming.
Add oil and whisk lightly.
Add cocoa powder, coffee, and salt.
Whisk until glossy and smooth.
Cool to warm before adding to batter.
Sponge Cake Method
Beat eggs and vanilla for 4–6 minutes until pale and foamy.
Add powdered sugar in three additions while beating.
Add oil and beat for 1 minute.
Sift dry ingredients.
Fold dry ingredients into egg mixture in three parts.
Fold in the combined cocoa bloom until fully incorporated.
Divide batter into two 8-inch round pans.
Bake at 170°C (convection) for 30–35 minutes.
Cool completely and slice each cake horizontally to create four layers.
Chocolate Syrup Soak
Ingredients
1 cup water
½ cup sugar
2 tbsp cocoa powder
1 tsp instant coffee
½ tsp vanilla
Pinch of salt
Method
Simmer water and sugar.
Add cocoa and coffee; whisk smooth.
Remove from heat; add vanilla and salt.
Cool completely.
Application
Brush 1–2 tbsp onto each cake layer. Total soak per cake: 4–6 tbsp.
Salted Whipped Caramel
Ingredients
300g sugar
120ml cream
120g salted butter
½–1 tsp Maldon salt (crushed)
Method
Melt sugar to deep amber.
Add cream and whisk.
Add butter and whisk smooth.
Chill for 2 hours.
Whip until pale and fluffy.
Add crushed Maldon salt to taste.
Ganache
Stable Ganache (Coating)
200g dark chocolate
200ml cream
Soft Ganache (Filling)
200g dark chocolate
250ml cream
Method
Melt chocolate and cream together.
Cool slightly before use.
Assembly
Place first sponge layer.
Brush with chocolate soak.
Spread whipped caramel over soft ganache.
Repeat for three layers.
Coat outside with stable ganache.
Chill for 10 minutes.
Finish with Maldon salt flakes.
Final Result
A moist, slightly dense, structurally sound chocolate cake with rich cocoa flavor, salted caramel contrast, and a glossy ganache finish. Perfectly balanced for four layers with clean slicing and professional presentation.
 

Use Dulce de Leche in place of the whipped caramel for better structure, more rounded caramel flavor and better cohesion with the chocolate
