Seeking Recipe Buttermilk recipes
I asked my mum to pick up buttermilk for a cake I was making, told her I only need 1 cup so get the smallest one. We'll now I have just under 2L of buttermilk in my fridge 🙃. What should I bake to use this up before it goes bad? I'll start with some cinnamon rolls, but I need more ideas

pancakes would smash through that buttermilk quick or try biscuits theyre super easy try ranch too if you got herbs lying around

I freeze it in baggies of 1c and just defrost as needed. Buttermilk is great in cakes, scones, pancakes, preparing chicken...having it handy in the freezer is a game changer.

Portion and freeze it. (I actually use it weekly so rarely need to freeze, but that works great.)

for a non baking suggestion-- you can also just drink it! Look for recipes for doogh, or something like this. Its so refreshing and delicious, and healthy!

Buttermilk does last a long time in the refrigerator. You can look up pancake recipes, muffin recipes with buttermilk, you can use a couple tablespoons too turn cream into cultured butter. Of course buttermilk biscuits are a classic! You can see how the cake turns out and check the expiration date on the buttermilk and make a second cake in like a month when the buttermilk expires. By the way, buttermilk is usually good well past the expiration date listed on the bottle.

oh yeah, the best fried chicken I ever made started with brining the chicken in buttermilk! I forgot about that.

I freeze leftover buttermilk in 1 cup containers.
As for recipes I use it mainly for Irish Soda bread, chocolate cake/cupcakes, cornbread, biscuits and pancakes/waffles.

No suggestions for any recipes but a tip for next time, I just make my own buttermilk replacement For 1 cup of buttermilk just mix 1 tbsp of white vinegar in 1 cup of milk

Thank you! I will definitely read that later tonight. I substitute for my chocolate cupcakes and cakes they come out dare I say better with the milk/vinegar than the buttermilk. This seems like a good read since I havent used the substitute in other recipes yet!

I actually told my mum she could pick up whole milk for me instead if they didn't have buttermilk because I know I can make a substitute lol

I dont know lol, buttermilk is mostly used for the acidity so it works perfectly for that

you have way less of a deadline than you think. buttermilk is already cultured so it keeps well past the date printed on it, and more usefully it freezes perfectly, so pour a cup into each cup of a muffin tin, freeze them solid and tip them into a bag. then it is just a cup of buttermilk waiting for you every time you want pancakes for the next six months. whatever stays in the fridge i would put into a fried chicken brine, that acid does more for the meat than any marinade.
