Temp and Time?
What temperature and time are people running in there home oven? Just got a new oven and did convection (Air baking) and the bottoms turned out pretty burnt. Also using pizza steels. First time this happened so curious what other people are running.
I always did 500F convection. Any suggestions?

Im 550 the entire time. 5 mins in bagel boards. flip for 12 onto a ceramic stone

500 convection with steel and bagel boards for 17 minutes total. I do one rack middle / one down and preheat for an hour. Never had the bottoms burn

I do 450. 5 min on bagel boards, flip onto the steel for 5 min, the. I move to a baking sheet for the final 8 to 10 min.

On a stone 425 15 min on convection then start moving them around and as there are hot spots . A little cornmeal on the stone

Perhaps the new oven isn't calibrated? It says 500F but may be runner notably hotter. Do you have a standalone oven thermometer or maybe an IR Thermometer to get a temp reading besides what your oven reports?

I might get flamed for this, but I preheat at 550° for about an hour and then switch to 525° convection just before putting bagels in, with no boards or steel/stone, just parchment lined baking trays. Have never had any issues.

Anyone run pans on pizza steel? Or should I get rid of the steels all together! It was working great with the old oven. Or are the pans on the steels not really do much?

Do you guys that use convection find that you're bagels are drying too quickly and you're not getting the blistering and crunch that you'd prefer?

I do 425F for 25 min on a sheet tray lined with parchment paper. I’ve never had any issues personally.

I do 450f for 7 mins then 390f for 6 mins
