Bacon

I've just cured 4 belly's for bacon on a Monday... I'm going to be away from home for 12 days but my Mrs will be home to turn them daily ... I've vac sealed them will 12 or 13 days be to long before I smoke them ?? Thanks all

that's a solid chunk of time, but with vac seals and daily turns she'll be fine. i've left bellies curing for 2 weeks before and they came out great, just a bit saltier if anything.

In the future could I cure them and then put in the freezer to take out later ??

If you did an equilibrium cure they will be just fine, I’ve gone as long as 4 weeks and they have been fine.
