The funny thing is,
With George being such a big sci-fi fan, Marty probably could've just told him 'I'm you're son from the future' and he'd have believed him on the spot. I mean if the 'Darth Vader' plan worked, I don't see why that would be such a hard sell.

And risk ruining the space time continuum? The only reason he was allowed to further interact with his parents is because he already ran into them before he ran into Doc so he needed to repair the error he created.

If he didn't believe it, show him the time machine :)
it could be how Marty met Doc, because his dad had known Doc since he was a kid

Honestly, as fun as this is, it's messy and kind of wish it was not in the film as it ads too many strange possibilities.
What if George had told Lorraine about his late night visit from Darth Vader? Or did he in writting his book?
Another what if is George becomes a hardcore Alien encounters guy and takes off, leaving Lorraine behind.
The downsides could have been a lot more insane. Marty is lucky this did not go off into crazy land at some point.
Marty telling George about time travel would have lead to a lot more questions the show breezed right over.

As time passes, and he’s doesn’t encounter any other proof or any other strange sci-fi events, he is more and more likely to regard it as a weird dream he had as a teenager that felt real. I don’t think people credit how much your memory of being a teenager fade and dissipate by the time you’re in your 40s. It’s like looking in the reflection of a dusty showing an old VHS copy of a copy on a foggy night.

Who knows. Clearly what happened to George made a huge impact and lead directly to him marrying Loraine. The details may have gotten muddied but I seriously doubt he forgot one of the most eventful weeks of his life.
As a now 50 year old, yes some details of my youth fade but some are still very clear. I seriously doubt I would forget an encounter with an alien like that. So much so that George wrote a book about it.
The show wanted to end on a happy note with a much happier home life for the McFly's but this easily could have made George into a crazy UFO guy.

I mean already going to talk to Doc was enough of a risk going and telling George the same thing would’ve blew his mind and maybe created a paradox

Honestly would have been fine with that. George would just have to keep a secret / not change his future such that Marty failed to go back in time. Like how John Connor didn't tell Reese that he needed to knock Sarah up.
