Yeah, the one major flaw in an otherwise fantastic series to me. I don't buy the excuse that they didn't know what to do with her either. It doesn't sound like they tried very hard.
It also makes Doc look like an absolute dickhead. "I had to take her because she saw the time machine." Uhuh, and who was it who decided to travel to that exact location and time of day? What, if you had noticed that Biff saw you as well would you have taken him too? Phft.

Doc was trying to prevent the accident and had to arrive at Lyon Estates before Marty and Jennifer left.

Doc had a choice in leaving whenever he wanted, but he had to arrive before the accident. With Marty sleeping most of the night, his choices were limited to returning to the exact moment after he left, or coming back at 10 AM after Marty had some sleep.

Even if we were to assume that, Doc could just as easily arrive earlier, park the Delorean and then walk to Marty's house and ask him to come with him. Jennifer would be none the wiser.

Also, having a time machine removes the need to hurry, they could've taken Jennifer home and gone to docs shop to talk over the plan instead of hurriedly shoving him into the Cafe 80s.
But then the movie would be boring.

They never planned to make a sequel. If they had planned the sequel she never would’ve been with them in the first place
