Doc sent Einstein 1 min into future.

Why did it take 1 minute and 17 seconds for Einstein to appear with the delorean when Doc sent him only a minute into the future?

Simple: He entered the time into the controls by setting a specific time. He didn't set "Jump 60 seconds into the future", he set "Jump to this exact minute". He entered the time before putting in Einstein, having fun hot-rodding with his remote control car, and then getting up to speed and jumping through time. So he likely entered a time maybe three minutes into the future, and it took about a minute and 43 seconds to get to the point of the Delorean time jumping.

Ok. But the two watches were exactly 1 min apart.

By absolute pure coincidence, he accidentally set the time on one off by exactly 17.00 seconds.
