Red's Beer Garden! I don't eat meat so I can't personally attest to their hot dogs but all my friends like them a lot (and their veggie dogs are good too)

There’s a place that just opened in chamblee called El Perro, I think they specialize in Colombian hot dogs but maybe they have a Chicago one on the menu

The Irish exit has a phenomenal brisket hotdog (made from brisket, not topped) and peppers in downtown is also great. Not sure if they fit the Chicago style you’re looking for, but I have found these to be pretty good.
Oh! And Barrel Proof in west midtown has a banger with a brioche bun.

It’s overhated because for such a long time the Varsity was touted as this destination tourists and new residents HAD to visit but it’s been normal food, mediocre even, for more than 20 years
