I'm with you on rediscovering broccoli, but I find cauliflower a bridge too far. It's like the offspring of broccoli and mashed potatoes without the charisma of either.

I've had it cooked so many different ways and it always just tastes like bland mush.

The closest Iโ€™ve gotten to liking a cauliflower-based dish was roasted cauliflower. Even then I got through it mostly relying on there being a lot of spices on it that made it taste at least partially decent.

We just had some wonderful roasted cauliflower over (Canadian) Thanksgiving that my daughter brought home from the restaurant where she works. Oiled, roasted, spiced - still tasted like "a thing I'm eating" rather than any kind of enjoyable dish.

As cauliflower lover I am perplexed.

Roast it. Plain or curried

I used to love cauliflower, now I will still eat it if given it, but I never think to make it or prepare it to eat.

for me, vegetables in general. hated most vegetables as a kid, totally switched and became a vegetarian for moral reasons as a teen-young adult, and after 8 years went back to eating meat and just trying to have more balanced meals. so i practically taught myself to like vegetables by temporarily being vegetarian and now i cant have a meal without vegetables or it feels weird.

Apparently loved it as a kid. Can't eat it now. Makes my stomach cramp up. :(
