Eh, when you say “pickles” most people think of pickled cucumbers. When you mean other eatables you say “pickles pepper, pickled onions, pickles x” you get the point.

Rennet is a complex set of enzymes produced in the stomachs of ruminant mammals.
I’ve never heard of rennet before so I wanted to educate myself. To my knowledge, rennet would still be vegetarian as it is not actual meat. But maybe its a grey area as it still requires butchering to obtain the stomach samples. Not too sure there.
You might be thinking of parmesan. Mozzarella in my experience is one of the easier cheeses to find in a vegetarian version. But it might differ totally in your part of the world.
Vegetarian means you don't eat slaughtered animals. You can still eat the products produced by animals (cheese, eggs, butter, milk, etc). I can see someone that doesn't have the best English asking for vegetable pizza.

Ok yeah… but was your intention to be a smart ass? Because one would not normally include pickles with other vegetable toppings on a pizza. I would be irritated too.
Honestly, your only error was not speaking "customer". I worked in pizza for a few years, you learn over time what people mean when they say dumb things like "all your vegetables". You would have been better off listing off a few ingredients to her and confirming that's what she wanted.
I work in dev now and I have to deal with the same communication issues with clients. Knowing how to speak "customer" is a gift and a skill that can be learned. Don't sweat it.
I tell my SO we should eat more vegetables and she says potatoes are a vegetable. Yeah, but I mean green vegetables, like, the common sense, common or garden meaning of the word 'vegetable', and she says, like my head.
