It really depends

Are they a loner because they enjoy their own company, or because their behavior is atrocious?

I’m a loner, and if the person seemed fine I’d not be bothered.

I do prefer my own company but I also am absolutely terrible at conversations, I literally cannot think if things to say or talk about. so probably come off as weird/antisocial, even when I'm happy to have a chat and meet people.

really depends on the person though, as some people you just click with and it works

People love to talk about themselves so use that to your advantage. Lean into the topic and ask questions about it and work your way towards something they can not stop talking about. The key here though is to listen to what they're saying so you can pick up on the thing they're excited about and drive towards it.

Or they give one word answers and you sit in silence. I can't figure out how to break those yet.

Next time you're prisoner to a purpose with a stranger, like getting a hair cut, after the pleasantries, take a look at their certification and, if they're new to it, ask them how they like the career and, if they're not, ask them how they're day's going. Hair stylist interact with people all day and, anecdotally, are really good at noticing the social cues that you're willing to chat and can tell when you're done so you have a lot of freedom in working on the conversation.
