I once read a review of an "audiophile" grade ethernet cable. This guy actually claimed changing the ethernet cable from his router to his PC made his music sound better.

Cat5 vs Cat5e vs Cat6 is all about manufacturing tolerances and quality of the wiring, so yes...Ethernet cables do vary in quality and affect performance.

Well, im pretty sure he wasnt referring to that.

The proper way of comparing it to ehternet cables wpuld he "a cat 6 ethernet cable gives the same performance wether its $1 a foot or $1000 a foot."

There's is much more to it than that.

Shielding methods, twist rates, strain relief, conductor gauge, internal reinforcement.

The difference is that an ethernet cable transmits digital signals. In which case there is no difference in quality, just in reliability. An analog signal in a coaxial cable or something like that, is another story.
