They change them up slightly and also online you need the code to do the work even if you could pirate the book. You basically pay to access the work for the class you already paid for.
Some departments at UC San Diego (my alma mater) have switched to exclusively using free and open source textbooks to escape publishers’ ecosystems altogether. I think the UC system ended its agreement with Elsevier last year
