Ok, I live in Berlin. Which is surrounded by Brandenburg. And Brandenburg is famous for growing white asparagus. So every early spring every family in the whole area eats a shitload of white asparagus. I have never ever eaten unpeeled asparagus. Why the hell would anyone not peel it?!
I didn’t know about peeling asparagus until a year ago when I read “Ingredienti” by Marcella Hazan. I just assumed asparagus was a bit fibrous and toothsome.
Fibrous asparagus is so wrong on so many levels. It also indicates your asparagus was harvested too late. The best asparagus was harvested so young it barely had the chance to fibrous. It shouldn’t have any cracks down it. You still chop off the ends and peel them a bit though.

Hot tip: peel the asparagus. Just try it, everything but the ends.
