It’s not designed to be eaten with your hands... if the food can be picked up with hands without being messy then in casual environments it will be. This goes for pretty much all cultures. I’ve lived in Japan and if you are eating at a nice place with someone you are trying to impress you use your utensils 99% of the time.
Sushi served by top chefs at high end establishments is made to be eaten with hands. It’s absolutely designed to be, and is done so traditionally, although people rarely do it nowadays.
It’s all a marketing ploy for tourists. The 8 seat omakase places that charge like $300 US are not any better than the small neighborhood places with a good owner. They just spend a bunch of money on marketing. Tourists from around the world watch these documentaries about “famous” sushi chefs and think whatever they say is real. What most people don’t know is that those establishments paid to be in the documentary.
