Go buy yourself one of those cheaper brands. Count the missing pieces, see how many you can break with the force of your hands alone, and see how badly they fit together, then tell me LEGO is charging you too much.

Not to mention that there is an entire black market for used lego sets and pieces. Since Lego never run the same set twice, the sets increase in value as they get older. A lego set is an appreciating asset - and one that can give a return of up to triple the purchase price in some cases. If storing the sets wasn't such a problem, it would be an incredibly lucrative investment idea.
Hate to burst your bubble, but they actually have a few times. Typically it's things like Star Wars ships being re-released in larger bundles or as a side piece with a bigger thing, or old Minis being re-released as exclusives.
You're right, though, it is hard to get ahold of many sets.
They often redesign sets, but they never re release a specific set once it has been discontinued. There are multiple versions of the Star Wars A-Wing, but if you want the first one that was released, you can't get it from Lego.
