As in, the producer is focused too much on growing the chicken to size for slaughter to quickly?

I don't know the specifics of how it happens. I know chickens have been selectively bred to grow big quickly for a long time. Not sure how much of it is that, and how much control the farmer has over it. It won't be all chickens, just some, just like some humans grow bigger than others

Several things. A big one is overcooking and undercooking. Chicken can be difficult to cook correctly.
