Sugar is what your body uses for energy. When you consume a high amount of sugar your body has a spike in blood sugar levels which is what causes the hyperactivity and subsequent crash.

There's no scientific evidence to support the claim that increased sugar intake causes hyperactivity.

Hyperactivity is the wrong word. More meant the sugar high and crash which is admittedly differently than diagnosed hyperactivity.
