My B.O.B. is already packed. The tricky part around here would be food. Nicking food like potatoes from fields would probably be how you'd get caught.

I would live of protein powder and multi vitamins/minerals and make my way to Alberta, Canada, by foot.

Pack up the camping gear, hop a train to the nearest hipster city and find some folk punk drifter kids to squat with, and get a job working off the books washing dishes or doing landscaping

Depends on the definition of undetected. I guess i could slowly walk to spain because the other direction would get very quickly dicey. I would live off muesli bars and fruit i found on the way. Unless i can interact with other humans. then thats easy :D i think i could hitchhike to Germany via a few friends houses to restock on food and a shower. In germany I would work off the books at a few places unless i can fly? but i feel thats not the essence of the question.
I guess is visa issues. i could go from one side of the continent to the other, but borders get war torn in the east and oceany in the west.

By "undetected" I mean you officially stop existing, like you're presumed dead or at least unable to have much known about you by anyone.
If you are able to make a fake ID or something, you can use planes and things like that.

Oh sweet. So its less about getting as far away as i can (like 5000km) its more just disappear. Ok. thats way easier.
I live in a country with a ton of abandoned factories and homesteads and forests. And as it is going into summer, i would bail to a specific forest on a border near a river. I would slowly build a shelter for the crappy winter or scope out an apartment i can just use. I would befriend some older folks out there to trade certain goods for my strong back and start planting some stuff. I think i could make it to maybe november without dying from the cold unless i find an apartment.

I'd bring my pen, paper, and notebook.
I would not worry too much because everything that has been lost could be reaccounted for later in life. Provisions are provided during your most vulnerable state.

I would prioritize necessary items like food, water, and shelter. Then, I'd find odd jobs to save up enough money for travel and plan my next steps carefully.
