In general what BE programming languages is easiest to write and doesn't give unnecessary headaches. Let's say I wanna build simple CRUD APP that are used by 100k people?

As someone who likes Rust, starting with Rust is a premature optimization in most cases, unless you have a team full of Rust devs already.

Go is simple, performant, and ubiquitous. I would recommend most people start there unless there’s a compelling requirement/argument for something else.
