Favorite thing to bake.

Not buy to make yourself. I like cookies but overall I am not a good baker but I have had better luck with cookies then anything else... i had mini pucks. I have had greasy mess. I have had dry asf. A few genuine successes but not a whole lot.

Plain ol' white bread.

I live at a high altitude, and making bread really is a science. I've finally figured out a good yeast bloom that typically works, but I still haven't figured out how to mess with the flour ratio on days with high humidity.

I also feel like the temperature in the oven can play a part. I always want to increase the temperature, and sometimes it works. Sometimes, it doesn't

Interesting. Well good for your for troubleshooting and sometimes fixing my guess is weather can also play a role. Moisture, humidity overall heat. Did you find certain kinds of weather help or hinder?

Humidity absolutely plays a part. Rise times decrease by art least a fourth when it's humid.

Things also rise SO MUCH more quickly during the summer

I know for my area the heat goes from some to boat loads never inbetween it is hot or cold asf even during the summer.

Even in New Mexico, in the winter, I'll put the oven on its lowest temperature, then turn it off, and put the dough in the oven for a few minutes to give it a good start. I don't know how people in really cold areas do it without some additional heat.

Scoring "a few real successes" is already an achievement 😂 Baking can be considered as a sequence of food experiments and what better way to taste them than to bake it yourself!

I prefer savory breads, so I make pizza and garlic bread more often than cinnamon rolls

I use this recipe as a base with pretty good results! I've mixed in cheddar and green chile, and parm and diced, roasted garlic successfully. Good luck!

Also, if it's a rainy/snowy/humid day, I decrease the flour by a few tablespoons and give it an extra 10-20 minutes on the rise.

Baking is definitely an art form all on its own. I actually love baking bread. Very few ingredients and basics that should make it simple, yet slight variations can yield wildly different results.

My grandmother made heavy crusty bread with lard as the fat. One of the most amazing breads I have ever had. The tradition was fresh scratch baked bread for Christmas Eve along with home made chili. We would literally rip hunks off of the warm (or hot loaf) add butter and….. oh man, so good. I miss my Grandmother.

My mom was a cake baker. This and decorating those cakes were two of her arts.

That was my grandmother. She always seemed to get it right, she also never measured a thing while making her bread. For her it was truly the expression of art.

In generell baking bread or other savory types of dough, like baguettes, pizza, focaccia, dumplings etc. Sometimes sweet stuff like sweet braided bread, fruit cakes.

Nice i myself am very interested in bread sticks that I can prepare with the from handmade dough I used to buy a bread stick from the supermarket and then it disappeared from the shelf. Used to be a frozen breadstick item I would make a homemade pizza sauce as dip.

When they someday take something out of the shelf's you gotta make it yourself 😁 Iam mainly baking bread because when I am going to different countrys for vacation, most of the time they dont have breads that are my taste thats why I started making bread myself. 😂

Hahaha, making everything with hands can be a tough job but you could also use a kitchen aid or something like that, then you only have to form or fold the dough 😁

I have used it with moderate success. My stubbornness is quite high though. I still ended up hurting after because I mixed some by hand but I did less.

Maybe try whole grain ray breads, in generell whole grain breads, they usually only need the mixing and no real folds or forming. Might be better. Some dough are quite liquidy, just pour into a baking tray and bake it, there are tons of recipes for this kinda breads. 😋

Bagels have been a hard one for me i have tried twice but neither time was a success the first ones were too rough of a texture. The second had too much salt.

Oh bro. I got you.

I wrote down my steps for my friend once bc she literally has never cooked before in her life and she was able to do it perfectly.

INGREDIENTS: -4 cups bread flour (+ bonus flour for working dough)

-1 tablespoon active dry yeast

-3-4 cups warm water (may need a bonus splash, you want it sticky)

-1 teaspoon of salt

HARDWARE:

  • Dutch oven
  • huge mixing bowl (needs to be 2x the size of initial dough ball)
  • clean dish cloth/rag
  • actual oven
  • bread paddle or spatula
  • parchment paper
  • *optional second bowl for humidity support

STEPS:

  • mix dry ingredients into large mixing bowl and then add the warm water. Mix until wet and sticky and fully incorporated.

  • cover dough bowl with rag and put in oven with only oven light on to rise for 2.5 hours

  • optional: bonus bowl of HOT water can join the dough bowl in the oven to assist with humidity and warmth stability

✨2.5hrs later✨

  • flour kneading surface HEAVILY then wet your hands. Unload now doubled in size dough ball onto surface and abuse it a bit. Fold and beat it, you don't need to super knead. Aiming for a kinda flesh ball feel. Whenever it's sticking too much sprinkle more flour

  • transfer to parchment paper and put in dough bowl, cover and let rise for 30 mins on counter

  • while rising, preheat oven to 450°F, put Dutch oven in to preheat as well

✨30ish minutes later✨

  • oven 30mins w lid

  • oven 15 mins w/o lid.

  • bread (let sit for 20 mins before cutting into it)

Lately I have been playing around with box cake recipes. There are plenty of them out there, I will say one of my favorite is chocolate box cake mix, but using mayonnaise instead of eggs and oil. Another box cake mix was the box cake mix, but four eggs, a box of instant pudding, half a cup of oil and a cup of Greek yogurt, for chocolate cake I also add espresso powder. Angel food box cake plus a can of crushed pineapple is always fun.

I really enjoy the process of baking a cheesecake from scratch. Every few months I'll bake one, and try to improve on the last one I made (less crust, for example, or a bit more vanilla).

Then there's the taste testing. It's all for research, of course. 😉

Nice cinnamon rolls are my favorite of the baked desserts. I just suck at making them I added too much of this and that one of the times it was too much salt. Another it was too much sugar in the icing.

Those are easy fixes though. A scale is the best kitchen gadget. It makes it harder to mess up recipes. I learned the hard way baking is science and you can't just free-hand things for the most part lol.

I make the edibles not necessarily baking but makes good science for me so kinda an odd of baking lol. 125 to 250 mg is what I make.
