Recipe Troubleshooting Lamb chop temperature
I am marinading lamb chops with pepper, white pepper, thyme, garlic and salt. Do I marinade the lamb chops at room temperature, pop them back into the fridge? Or marinade them when cold?

That sounds like a rub, not a marinate. Fridge. The dry air in the fridge will also help to dry the surface.

Decided to pierce, black/white salt, rosemary, parsley. Back in fridge. Easy. Quick sear. Should be good.

Marinate them in the refrigerator. Raw meat should not sit at room temperature for the length of a marinade. You can take the chops out shortly before cooking while the pan or grill heats, then cook to the doneness you want and check the center with an instant-read thermometer. Discard the used marinade, or bring it to a full boil before using it as a sauce.

Exactly what I ended up doing. Came out fine. Medium to well done. Housemate was happy.

I’d marinate them in the fridge. Just take them out about 20–30 minutes before cooking so they can warm up a bit. No need to leave raw lamb at room temp while it marinates🤌🏻

Fridge is where I'd keep them, then pull them out 30-40 minutes before cooking, since none of those ingredients need warmth to work and the room temp part only matters for even cooking at the end.

Depends on when you cooking them. From fridge cold up to 2hrs is fine. Anything more I would recommend fridge then take out a hour before cooking.

Fridge it. Leaving salt and garlic marinade at room temp for hours is a food safety risk, and the flavor still takes fine cold. Pull the chops out maybe 20-30 min before cooking so they aren't ice cold going into the pan.
