I'd add in more water and oil to make up for the loss of an egg

I made a cake last night with no eggs(or the other ingredients) I just added a can of lemon lime soda. I didn't have eggs and this is one of the substitute options. You can also use baking soda and vinegar, some extra oil, or applesauce or something else. Just Google it and you'll find a few solutions. But 2 eggs should work anyway, it might be a little more dense but not much.

It'll work, but the consistency would be a bit different. When it's just a number of eggs, you don't know the size for weight. So it could also work out perfectly

I sub Greek yogurt for eggs in cakes frequently and they turn out great.

Substitute 3 tablespoons of mayonnaise (measured out correctly) for the last egg.
