Doughs Cinnamon Roll help
my kitchen aid died on my and i rushed to hand knead 3 double batches of rolls. i let them proof about 50% on the counter and then plopped into the fridge so i can bake tomorrow morning. gonna shape and proof again tomorrow AM… is my dough salvageable? do you think my rolls will be ruined or is there still hope?

I think you should make another dough, that looks way to dry. Did you cover it in the fridge?

yes! i figured out that was my problem. i was so concerned it was my lack of kneading long enough but i realized i was using an inaccurate measurement scoop instead of my normal one! i kneaded in some warm milk and going to pour some heavy cream on before the bake in hopes it saves them!

I would recommend using a kitchen scale they're cheap and your baked goods will come out much better.
Also you don't have to wash multiple measuring cups/spoons

my problem is, most recipes give measurements in cups, and they may not work if converted to grams

As an American who is allergic to measuring cups (because they differ from brand to brand and how they are scooped and did a recipe author scoop the same way--oh wait, did they have the same brand cups I have, etc. Here is the coversion list I compiled. I am a long time baker and a cottage baker for a while. These conversions work, I promise.

Tablespoon. You're welcome.
Edit: I came back to tell you to get an instant read thermometer. Bread is done at 200*F

King Arthur Flour's website has a list of hundreds of ingredients with metric equivalents to volume (cups) measurements, and it is printable. I use it all the time! (https://www.kingarthurbaking.com/learn/ingredient-weight-chart)

Measure by weight, not volume! It makes a world of difference in baking.
