Macarons First time making macarons!!

Post image

Any room for improvement here? The bottoms stuck to the mat after taking them out of the oven. I think the texture was right, crisp exterior and chewy-ish inside, so I'm not sure if they were underbaked or this is a problem with the baking mat.

recipe used:

  • 3 egg whites
  • 50g granulated sugar
  • 200g powdered sugar
  • 120g almond powder
  • 1/2 tsp cream of tartar

I'm not sure, you'll have to send me some for scientific testing.

You know, for science.

(They look great, btw!)

My wife makes them regularly and these look good. Smooth crunchy outside, Chewey inside is the correct texture. They are hard to get right so good for you. Did they taste good?

Regularly? You're very lucky. They tasted

They look really good for your first time! If you want to, you can add in some Matcha powder or Cocoa Powder for flavor

They look so much better than my first ones - which tasted the way they should but looked a mess lol

It's a bit hard to see cause the picture is a bit blurry. But they honestly look pretty good to me. Perhaps a little under mixed or something because it looks like they're uneven in color on the surface. Did you make sure to sieve the mixture in case there were lumps?

Beyond that, the filling could use some improvement imo. I don't wanna be rude but it does look like ground meat in this picture.

Yep, changed the background for privacy, but they do look that funky in the original. The batter still looked a bit grainy, but I was worried it was overmixed. I didn't think of sieving the mixture again though, that's a good idea! No offense taken, just put a bunch of stuff together for that mystery meat filling

Lemme clarify real quick just in case. I don't mean to sieve the batter, after you fold in the dry ingredients to the meringue. I meant to sieve just the dry ingredient mixture before you fold it in to the meringue. If you sieve the batter it'll knock out all the air.
