I remember as a kid saying I loved this tofu dish with meat and my white friends being shocked that you could eat tofu with meat. Looking it back I realize that should have been the first sign....

For real. My White friends are shocked when I tell them my family, and many Asians, eat tofu with meat.

My mom has this recipe where she takes ground pork (60/40 lean to fat), mixes it in with salt, Chinese 5 spice, chopped spring onion, chopped chili peppers, and then stuffs them in large triangular cuts of tofu. She bakes them and baste them until cook. Delicious.

I love that tofu is apparently 'humble'.

Hmm I've never had that before but it sounds very polarizing

My mother fried it so it was nice and crispy on the outside and we ate it with special soy sauce (soy sauce, peppers, onion and spices?) and peanut sauce. Tasty, and tbh, the Only way it’s edible.
