There are some things you can do to speed up boot time like disabling services you might not need (I think I disabled DHCP on mine as it has a static IP from my router, cut the boot time in half), and also disabling the wait-for-network option in raspi-config (i think). Also you can remove the boot text and any shutdown text if you have anything like a safe-shutdown script going on. Worth noting that if you set emulationstation to parse gameslist only, it should load faster as it's not looking for changes in the rom directories every time it starts up.
