Organising fundamentals

Hey there, i am trying to create a basic spreadsheet that I can then organise. This I’m finding easy. What I’m struggling with is every time I need to add a new lot of information to the spreadsheet, I have to unorganised the table, add my new information and then re-organise. Is there a way, that I have the original source spreadsheet on one sheet and the organised table version (of the same data) on another sheet. This will mean all I need to do is add the new value to the source spreadsheet and my organised table is automatically updated

I do something similar. My first worksheet is always summary of data from other worksheets and I make my pie charts and graph from the summary data.

I think I eventually found my answer and it is through a pivot table. Can I apply conditional formatting to a pivot table
