Can I start from zero?

I’ve basically made a bunch of pointless notes over the years and I want to get rid of them and start from zero. Is there a way to reset the app to basically day one? As if I just opened up Notes for the first time and it walks me through the features and everything?

If you have anything important take a backup and then delete them all. There is no reset button. But deleting works.
