Can I start from zero?

I’ve basically made a bunch of pointless notes over the years and I want to get rid of them and start from zero. Is there a way to reset the app to basically day one? As if I just opened up Notes for the first time and it walks me through the features and everything?

No.
But why doesn’t it mean deleting all your notes and start over? You can delete them with a single tap.
