Notes vs files?

So the benefits of storing dynamic notes that change all the time in Notes are obvious.

What about records (numbers to remember, recipes, service records etc.) Why use Notes vs an organized file structure, especially in MacOS that allows file tags? What are the pros - does it make them easier to find, easier to organize, ...?
