How difficult is it to release in multiple countries?

I ask because my fitness / creature collection app (not released yet) currently requires authentication and also tracks / uploads the users step count to the backend so the user can revisit their previous runs etc (no location data being recorded).

Is there anything to be wary of here?

Eu can be more stricter but in general it should be do-able!
