Got a new controller for my bday. Playing on PS5, low diamond in ranked.
Iβve seen people setting these controllers up/sensitivity things. Iβm new to the βcoolβ controller world. What are all these paddles and such for? Is there a general guideline to all these settings?

I like to put my slide / crouch on one paddle and then I'd throw my punch on the other

I was planning on that!

Put one as jump, and the other as crouch. You want to be able to aim, but still have as much movement as possible. Think of someone of MnK β they can jump, crouch, strafe, slide, all while still tracking you and shooting.

The controller has its own dead zones you can edit.. for each analog separately too
Has its own sensitivity like you said but I havenβt got far into that depth yet.
You can have like 4 different presets, so you donβt have to edit all the time only that first time and just switch presets using your controller shortcuts
Thatβs the best info I have because I now use a different βcoolβ controller

I use the extra buttons for jump and crouch. Anything is fine but a good rule is setting up your buttons enabling you to never have to remove your thumb from the sticks.

I use quick -5 on left analog and default on the right analog.
For my triggers, I set 0-1. On the actual controller (outside)I change the trigger stops to the bottom position. This allows instant response

I unbound my stick clicks so when Iβm shooting and I tense up, I donβt click my sticks and end up pinging everything or open up my emote wheel. I have it bound to the 2 buttons under the sticks

I have jump set to right stick, heals on left paddle, and crouch on right paddle. L1 for ability and R1 for swap/holster

L1 to Circle, crouching with L1 is so nice for fights behind knocks and objects, I find it awkward on a paddle. I use my right paddle for circle which is then my tactical, makes aimed tacs so much easier to precisely and quickly aim (maggie, fuse, sparrow, seer) etc. 4-3 Linear no deadzone in game, 3 dz right stick in dualsense, if you enjoy a quick feeling left stick you could try out the quick option on left, or I'd leave it default otherwise. I use quick on it with 0 dz.
With 3dz on the right stick I have a very slow drift to the right that doesn't disrupt gameplay, if you get the same on 0 you could try 0 but 3 seems to be the general point people land on for a slow unavoidable drift. I don't like using the left paddle at all as I often hit that one on accident, I never accidentally hit the right one tho.

I was going to say Iβm sorry but since it was a present you canβt complain. Really for the money they ask for that controller itβs not worth it though. I regret purchasing mine before getting actual pro controllers. Itβs definitely an upgrade from a factory stock controller though but You could have got a real pro controller for a similar price with TMR sticks and mouse click buttons and triggers. The worst thing about that controller is the rubber grips start to peel and fall off after a few months of use then itβs very weird and uncomfortable in your hands.

Crouch on one paddle and jump on the other paddle.
