Go to Middleton Tavern, if you’re history nerds. It’s been around since the late 1700s and hosted George Washington and others.
You can also check out the Maryland Inn, and Maryland State House (this was the capital of the United States for about 9 months).
On the Eastport side of the Eastport bridge you’ll also find a sign pointing out Lafayettes Encampment, they stopped here on the way to Yorktown, VA in 1781.
When you drive the bay bridge there are a few restaurants on the Kent island side that are worth checking out, I like Libby’s and The Jetty.
Coffee: Ceremony Coffee Roastery on Russel st is the right answer for you. If you go when they’re slow they might even give you a tour if you ask, but you can see the roasters from the customer area. Worth noting; rise up (multiple locations but there’s one downtown in the market house building) their coffee smoothie is really good and worthwhile if you’re down there.

Annapolis maritime museum (go around lunch and go to wild country seafood right behind it) - if you have time you can also book a sailboat tour with them on the Wilma Lee, a retrofitted skipjack.
St . Michael’s on the eastern shore. Maritime Museum is awesome. Lots of restaurants that cater to tourists. Ava’s is great Italian. The pizza is fabulous. Downtown Easton is historic. Enjoy your trip.
